Pre-shucked commander squid
Squid meat is a valuable dietary product containing a large number of useful trace elements: iodine, copper, selenium, phosphorus. In order to fully benefit from this unique product, you need to know the basic simple principles that allow you to determine its quality, and properly prepare it.
When choosing a squid, you should pay attention to the region of their origin. The most delicious are the Far Eastern squid, which includes the commander squid — the only species produced in Russia on an industrial scale.
There are many options for cooking commander squid: they are boiled, fried in a frying pan and grill, served as a main dish, added to pasta, salads and sauces. The general rule is that they should not be subjected to long heat treatment: the meat will become dry and hard, like rubber.
To properly cook Commander squid, for example, for adding to a salad or stuffing, you can choose one of the methods listed below.
- Prepared carcasses with the removed film should be poured with boiling water for 10 minutes.
- Lower the carcasses into boiling salted water, bring to a boil again, remove from the heat and leave under the lid for 5 minutes, remove from the water and cool.
- Cook the carcasses, dropping them alternately in strongly boiling salted water for 10 seconds
